I plan the layout to keep seams away from where light hits, screw to the framing at the right spacing, and finish in three coats. In bathrooms I use moisture-resistant board.
Code note: Walls between a garage and the house usually need 5/8 inch Type X fire-rated drywall. I use that where the code calls for it.
